It doesn’t take much to make me happy. Cooking ranks pretty high on my list. I think the only thing that makes me happier than cooking is cooking for my friends and family. It’s my sincerest expression of love and gratitude and is my creative outlet. One of the most rewarding parts of starting a food blog is being able to share the recipes that I cook for my loved ones with people from all over the world. Tried, Tested & True
To be completely honest with you I was a bit skeptical of receiving meat in the mail. I know my steak and I’m very involved in selecting which cuts my hard-earned dollars go towards when I’m at the butcher. There’s nothing worse than coming home with a crappy cut. Whoever is responsible at E3 Meat co. for butchering the animal and selecting the cuts for your order is a true connoisseur of meat. The steaks were select-cut, perfectly marbled and masterfully butchered. The steaks in this giveaway will undoubtedly be of the same quality.
As for the taste of the meat, no need to take my word for it. Like I said, I love cooking for my near-and-dear, which is why I gathered some of my closest friends for dinner on Saturday and fed them an E3 Meat Co. feast of Primal Gourmet proportions! Each steak was cooked using the ‘Reverse-Sear’ method and finished over a wood-fired grill while being basted with garlic and rosemary infused ghee. The unanimous decision was that these steaks were unequivocally delicious. They were juicy, flavourful and extremely tender. By far and away, the 10 oz filets were crowned champions of the evening. It’s interesting because I normally don’t like the tenderloin but wow was I surprised. I can easily say it was the best filet I’ve ever tasted (believe me, that’s saying a lot in my books and I run the risk of upsetting some very important people by saying this). Granted, I did wrap them with beef bacon.
I’ve outlined my cooking method below so that you can try it for yourself. The ‘Reverse Sear’ is particularly great for large and thick cuts like the cuts from E3 Meat Co. For smaller cuts, I like the quick-and-dirty method outlined in my Friday-Night Steak and Yam Fries. I think it’s very important that if you do decide to finish your steaks over fire, you use real wood. If that means layering it in with charcoal then so be it but try your best to avoid any charcoal that’s been treated with chemicals and what-not. The flavour imparted from the wood is very special and acts like a seasoning in its own right.

+ Wood-Fire Steak Basted with Garlic, Rosemary Ghee
Steak of your choice.
3 Tbsp Ghee
2 cloves garlic – smashed with skin left on
1 sprig fresh rosemary
Freshly cracked pepper
Note: I wrapped the filets with slices of beef bacon and tied it with butcher’s twine – *optional, yet recommended.
Method (for medium rare):
- Light a wood fire grill.
- Preheat oven to 275f
- Pat steaks dry with paper towel. Liberally season with salt and pepper and place on a rack over a baking sheet.
- Bake approx. 45 min or until internal temperature reaches 128f on a meat thermometer. Note: steaks thicker than 2 inches take approximately 1:30hr – 1:45h in the oven.
- Remove steaks from oven and set aside.
- Melt ghee, garlic and rosemary in a saucepot (such as this one here). Brush each side of the steak with ghee mixture and place over direct heat. Grill exactly one minute. Flip the steaks, baste again and cook exactly one more minute.
- Remove steak from grill and transfer to the same rack you baked it on and allow to rest 5 minutes before serving.
