Have you ever seen that hot sauce commercial with the old granny? In it, she claims to put that sh$t on everything! That’s EXACTLY how I feel about guacamole. I literally put it on everything! It goes in my salads, on top of steak, chicken, fish, shrimp, lamb, eggs, and everything in between. Sometimes I just eat it with a spoon. Sometimes I just shove my face into the bowl. Woah, I think I’m sharing a bit too much information here!

Let’s just say that everyone has their own favourite way to make guacamole. This is the recipe I love the most because it uses nothing but fresh ingredients. There are no fillers. The creaminess of the avocado, is the perfect anchor for the brightness of the fresh cilantro, the bitterness of the red onion, the juice of the tomato and the acid of the fresh lime juice. Let’s not forget the spice from the secret ingredient: chipotle pepper.

If you think chipotle means a fast food burrito joint, you need to crawl out from under that culinary rock my friend! A chipotle is a smoked jalapeño pepper that is conserved in a smoky and rich adobo sauce. It is super flavourful and when you add it to the guacamole the entire thing just bursts with smoky goodness. Sure, you can make it without the chipotle pepper, but if you’ve never had it this way, you have got to try it! Be warned, however, you might become addicted.

  • 2 avocados ripe
  • 1/8 cup red onion finely chopped
  • 1/2 tomatoe seeded and diced
  • 1/4 cup fresh cilantro leaves finely chopped
  • 1 lime juiced
  • 1 chipotle pepper plus a tsp of the liquid it is stored in
  • Salt and Pepper to taste
