Whole30 Zesty Purple Cabbage Slaw

This Zesty Purple Cabbage Slaw is a great accompaniment to roast meats like my Mojo Roasted Pork Shoulder. It's Whole30-compliant to boot!

Ingredients

  • ½ purple cabbage – finely shredded using a mandoline
  • ½ cup red onion – finely minced
  • ½ cup fresh cilantro – finely chopped
  • 1 jalapeño – deseeded and finely chopped
  • ¼ cup toasted almonds – roughly chopped
  • 1/2 cup freshly-squeezed orange juice
  • zest of one lime
  • juice of half a lime
  • ¼ cup avocado oil
  • 1 tbsp apple cider vinegar
  • salt and pepper to taste

Instructions

  • Whisk together orange juice, lime juice, lime zest, avocado oil, apple cider vinegar, salt and pepper. Set aside.
  • To a large mixing bowl, add purple cabbage, red onion, cilantro, and jalapeño. Pour in the dressing and toss everything to combine. Cover with plastic wrap and refrigerate one hour. Taste for seasoning and adjust as required.
  • Before serving, garnish with chopped toasted almonds.
