I’ve said it before and I’ll say it again, a smoothie is the ultimate breakfast food. It’s quick, easy, delicious, über versatile, affordable and can be prepped the night before. Paleo options are endless and with the right mix of fresh, colourful and nutritious ingredients, a smoothie will help boost your metabolism and immune system first thing in the morning.

This Ginger-Beet Smoothie recipe combines the powerful antioxidants found in beetroots and blueberries with the cancer-fighting, anti-inflamatory properties of fresh ginger. Everything is blended together with pomegranate juice and fresh lemon juice for added vitamin C and bright flavours!

Note: This smoothie packs a flavourful punch. If you find that it is too sweet or strong for your palate, try using it as a concentrate and add fresh water to dilute it.

The Zwilling Sorrento Double Wall glasses are great for smoothies like this one. The smoothie suspends within the inner shell. It looks as though it is floating in air. The double-wall also helps keep the drink cold and prevents condensation, which means it won’t leave water-rings on your coffee table. I’m pretty sure there are no health benefits to this glass but it sure does look cool.

INGREDIENTS (serves 2)

1/4 cup beetroot – peeled and roughly chopped

1/2 cup blueberries

1 tsp fresh ginger – peeled and roughly chopped

1 tbsp fresh lemon juice

250ml all-natural pomegranate juice

1 cup ice

water to dilute (optional)

METHOD:

  1. Add all the ingredients to a blender and blitz until smooth.
  2. If the smoothie is too strong in flavour, simply dilute with fresh water (optional).
